Here is English version of the original quote I'm looking in French
I fly because it releases my mind from the tyranny of petty things . "— Antoine de Saint-Exupéry.

the translation can be : je vole parce que cela libère mon esprit de la tyrannie des petites choses, but I do not find the book where he could have written this sentence.

I don't think this quote was ever in one of St. Exupery's books. Per the attached link, it was something he once told a friend. The quote in its entirety:

"I fly because it releases my mind from the tyranny of petty things; it gives me a sense of wider horizons"
